Just What I Needed for my Ninja Creami!
This Xantham Gum was perfect to get that texture just right in my protein ice creams! I usually use a light dusting of it across the entire top layer of what ever protein Ice Cream I am making to help prevent the "Icey" texture that some people complain about. If you notice the texture is a bit too runny after just one spin with only minor defrosting you can add this to future batches to help prevent that!

Better than Guar Gum for ice cream
This stuff is amazing. I used it to make ice cream in my ninja creamie deluxe and it turned out great. Highly recommend using this over guar gum. This stuff makes the ice cream come out light and fluffy. Better texture and taste than guar gum or other fillers

Tricky to work with
I bought this for a science fair project and it’s very tricky to work with. As soon as you mix with water it starts forming lumps and you have to mix it vigorously to get rid of those

This product was included in a recipe for gluten-free oatmeal chocolate chip cookies on the website of a major flour manufacturer. The cookies turned out so much better than I expected - and I've tried more than a few recipes made with non-gluten ingredients. They still didn't have the "chew" of those made with regular AP flour, but they were head and shoulders above the usual ones. NOTE: The package warns against allowing babies under 2 about consuming it, so be aware!

Space saving size!
I have been doing more gluten free, sugar free baking. This is an ingredient I am not so familiar with. I like that it was a reasonable price and not a huge container. The recipes I have made only call for a tiny amount so it would be silly to buy a big tub!

Works for Thickening, But Too Sticky
I tried using xanthan gum as a thickener in my lotions, and while it does thicken them, I don’t like the sticky feeling it leaves behind. It’s not the right fit for my lotions, so I won’t be buying it again. However, I can see how it would work for other recipes where stickiness isn’t an issue.
