Great book!
I liked this book! I liked it because it starts with basic math principles and progresses to everything you would need or ought to know (math wise) to run a successful restaurant or catering business. The reason I bought it was because I needed to learn the math concepts of yield when expanding a recipe into larger quantities. Eventhough I work in foodservice at an elementary school cafeteria, I learned that the culinary arts program at my local community college has a prerequisite class based on culinary math. So if you're into that as a career choice, you should get this book.

Lots of mistakes throughout
Overall really well put together. My disappointment is that I expect a fourth edition book to have gone through more editing to make sure there’s not that many mistakes. Pg 102, example 10.3 says “each bunch of basil is $0.79 ea.” and proceeds to say the basil is bought at $1.39 per bunch in the example problem. Pg. 125, the “Step 1” part is a whole sentence with the words not spaced out at all. I realize the above will only be understood by anyone that already owns the book and can skip to those pages and see the mistakes, but regardless, these tiny mistakes make understanding math much more difficult to those that already have difficulty with it.The text is definitely hard to read. I’m not sure why they picked a weird, light, olive colour for text and pictures, I’m guessing it’s cheaper for printing? And yes, only half of the answers are on the back answer sheets. I simply skip the questions that don’t have an answer to them since I can’t check my work.

Missing half the answer key
Good book helpful for sure but honestly they left out half the answer key! How can you check your work if half the answers aren’t available?! Still a helpful tool for any cooking student.

Well-received. Bought it for my daughter as it is a compulsory textbook for her Culinary Art degree program. Glad to find it available at Amazon.
