I give each knife I acquire the following test: Can it produce an ultra-thin slice from a large, thick-skinned lemon---with just one (1) swipe?This knife passes the test easily--as do my other Enso knives. -- This is also true for my two (2) Miyabi knives.Nope. I don't get this result from my Classic Shun knives. Too bad--since I own four (4) of them.Another plus for this knife is that it is the most beautiful of the unnecessarily large lot.

This is the finest knife we have ever owned. They are damascus of the highest order. We also have the matching chef knife. Total heirloom. Unbelievably sharp.
