Fun Shapes
I love pancakes, but have never seen or tasted these Danish spherical version before this purchase. I decided to give it a try after watching a few demos on YouTube. Those guys make it seem easy, but in reality it takes a bit of work for a newbie to Ebelskiver like me! I suppose 'practice makes perfect', but my first two attempts have been just so-so. The biggest problem I'm having is the batter drying up after my second turn, so it is not possible to make the cakes round (on the 3rd and last 'turn') unless I add more batter - which messes up the process because I'd spill batter all over the pan. LOL. Thank God for confectioner's sugar, though, because it covers up the uneven 'add-on batter' of the finished product.I am very happy with the quality of the product. The non-stick Teflon (?) makes it easy to clean, and the material underneath supplies even heating. I also like the angled handle.

My little pancakes and even little omelets turned out great
I bought this pan because I like the idea of smaller serving sized pancakes. The box arrived and it was well packaged, with no scratches and it included a little cookbook with a lot of different ideas and pancake recipes. The pan felt heavy and well made, with a nice sturdy handle. The cookbook is hardbound, and filled with pictures of the recipes. We made simple pancakes for the first try with the pan. We made sure to butter each of the little pancake holes on the pan and followed the directions as to when to flip them. The directions are right on the box, and they tell you clearly when to flip the pancakes. Since they are little pancakes they cook rather quickly. The result was seven nice looking, fluffy little pancakes. They tasted great and I liked the presentation of smaller pancakes as opposed to one large one. As long as you aren't ravenously hungry or have a huge appetite they are rather filling. I ate four of them and was very full.We also made mini omelets in the Ebelskiver and they turned out great. We have toddlers and the small portions are also perfect for their needs. The small sized pancakes and omelets that you cook in the pan make for portions easy to grip by small toddler hands.I am looking forward to using the pan more and trying more of the recipes in the book.

Makes a Great Breakfast
We have one restaurant in town that makes these and I love them. I wanted to be able to make them at home without battling the Sunday brunch crowd, so I grabbed this little gem. This pan makes the perfect sized Ebelskivers. This comes with a cookbook filled with lots of recipes and not just Ebelskiver recipes, but regular pancake batter mixed a little thicker than usual would work just as well. The pan fits over my burner perfectly and seems to heat evenly. I do recommend cooking them longer on a lower heat and turn 2/3 at a time so they cook all the way through. My first round was at medium heat. They looked beautiful on the outside and were still runny on the inside. I moved the temp to medium low and they cooked all the way through without burning. This pan does not come with turners, but chop sticks work just as well. :)

Awesome products, fantastic price!
Received this as a Mother's Day gift after trying out a borrowed Ebelskiver cast-iron pan and deciding that I wanted my own. This pan is much lighter to lift, heats up faster, and seems very high-quality. Easy to use--makes the puff pancakes super fast, and is truly non-stick, especially if you use a tiny spray of oil. Cleanup is a breeze! RE the book: the breakfast recipes are surprisingly varied and look absolutely delicious--much more in there than just ebelskivers. What a fantastic deal--two awesome products for a great price that I plan to use for many years to come! BTW--hint for busy cooks: you don't need to beat the egg whites until stiff--just adding the white in along works great. I've made them both ways and haven't noticed a difference--both methods result in delicious ebelskivers. I've even made up my own "ebelskiver mix" following the book's basic recipe--I've substituted powdered eggs and instant dried milk--and now all I need to do is add the correct amount of water, a little oil, and a little lemon juice or vinegar (for the buttermilk flavor.) I can literally have ebelskivers on the table in 5 minutes! Endless variations are possible--we've tried ham and cheese filling, chocolate chips, and the traditional with powdered sugar, cinnamon-sugar, or drizzled with real maple syrup. Next on the list will be blueberry...can't wait to try them! :)

Love! Fabulous, truly nonstick pan, and a nice cook book!
We love this set! The pan is nice and heavy and truly nonstick. They recommend handwashing it to extend the life of the pan.The book that comes with it is surprisingly nice! I'm attaching a photo of the list of recipes included below. There's a recipe for chocolate filled ebelskivers on the box, and it's not included in the book, so be sure to snap a photo to paste inside the cover. The 1st and 2nd photos below are of the Apple Strudel Ebelskivers. Oh my gosh, are they ever delicious! The recipe says it makes 21, but it actually made 42.The 4th is of the Æbleskivers in Magnus Nillson's The Nordic Cookbook . These are very different. They have a high yeast content and rise for 25 minutes before going into the pan. They have a much more doughnut like consistency. Excellent.I bought Mrs. Anderson's beechwood ebelskiver turning tools, and they work really well. The book mentions that wooden knitting needles work, too, if you have them.
